Apple and ginger

1/4 inch piece of ginger grated

1/2 tsp of honey

cloudy apple juice

1/2 a cup of ice


Blitz everything together with your blender.


melon iced treat

the juice of 2 oranges

1/4 inch of ginger grated

1/4 of a small melon, seeds removed

1/2 cup of ice

Blitz everything together with your blender.


Limeade

3 cups of water

1 cup of lime juice

1 tbs of honey

1/2 cup of ice


Blitz everything together with your blender.

strawberry milk shake

1/2 a cup of strawberries or another berry

1/2 a cup of milk

1/2 a cup of ice

1 tsp of vanilla essence


Blitz all of the ingredients together


mango and pistachio

1 mango, peeled and chopped

1/2 a cup of milk

1/2 a cup of ice

a small handful of pistachio nuts, chopped


Blitz the mango, milk and ice. Taste it and add a little honey if the mango was bitter.


Pour into a glass and sprinkle with the nuts.

Date shake

1/2 a cup of plain yogurt

1/2 a cup of milk

1/4 cup of soft dates

1/2 a cup of ice

a sprinkle of crunchy granola

 

Add the yogurt, milk, dates and ice into the blender and blitz well. Taste and add more of any of the ingredients or a little honey if you would like it sweeter.


Chocolate treat

1 banana

1/2 a cup of milk

1/2 a cup of ice

1 tbs of coco powder

 

Blitz all of the ingredients together. Taste and add some honey if you wish. A spoon of nutella chocolate spread also works instead of the coco powder.

honey lime and ginger

3 slices of fresh ginger

the juice of 2 limes – or 1 lemon

1 tbs of honey


Stir the honey in s dash of warm water. Add the ginger and juice and top up with hot but not boiling water. Boiling water will diminish the goodness in the fruit.

 

mint and lemon warmer

A handful of mint leaves, washed

the juice of a lemon

1 tsp of agave syrup or light honey


Add the mint leaves to a glass and bash with the end of a spoon. You want to bruise the leaves to get the flavour out. Add the honey or syrup and the juice of a lemon. Top up with hot but not boiling water.

 

hot milk ad honey with a pinch of cinnamon

a cup of milk heated

1/2 tbs of honey

a pinch of cinnamon


Stir all of the ingredients together and drink before bed.

Berry and yogurt smoothie

1 cup of berries - either mixed or all one type – blackberries are great when they are available as they are free.

1 small cup of yogurt

1 small cup of ice

1 tsp of vanilla essence – optional

1/2 tbs of honey – add more to taste the berries might vary in tartness

a pinch of cardamom is optional but it tastes great


Blitz everything with your blender. Taste and see if you would like to add anymore sweetness.

Banana, buttermilk and maple syrup with ground almonds

1 banana

1 small cup of buttermilk

1 small cup of ice

1/2 a cup of ground almonds

2 tsp of maple syrup


Blitz everything with your blender. Taste and see if you would like to add anymore sweetness.


Breakfast peanut-buttery delight

1 banana, peeled and chopped

1 tsp of peanut butter

1/2 a cup of ice

1 tsp of honey

1 cup of milk or soya milk

1/2 a cup crunchy granola and a little more for sprinkling on top


Blitz everything in a blender. Hold a little of the granola aside and use it to sprinkle on top to add extra crunch.

Gnocchi recipe for Irish Examiner readers

 

As promised in the article on the 22nd of October here is a recipe for homemade gnocchi. It is very satisfying to make and not too difficult.

700g of mashed potatoes

2 egg yolks

1/2 cup of flour

 

Place your mash on a clean work surface and make a well in the centre. Add your egg and flour and mix all of the ingredients to form a dough.

You may need a little more flour if your dough is still wet.

Roll your dough into a number of long thin sausages. Cut each of these into bite size pieces. Flour your hands if this becomes difficult. Toss each little gnocci into some flour ans rest them for a while.

Pop your gnocci into a pot of salted boiling water.Once they rise to the surface of the water they are cooked. Remove them with a slotted spoon.

After I boil the gnocchi I find the texture can be a little squishy for my liking. I place them on a hot frying pan for just a few minutes. This crisps up the outside a little and makes for a nicer feeling in your mouth.

Grated carrot salad with dried cranberries

4 carrots

a handfull of dried cranberries
a handful of sesamy seeds
1 tbs of wine vinegar
1 tsp of sugar
3 tbs of olive oil
seasoning

Mix all the ingredients for the dressing in a bowl and toss the carrots and cranberries in the dressing.  Stir the sesamy seeds through.
